Shrimp Salad Recipe

So growing up in the south my whole life, I love good food and it’s the key to my heart. The only thing is, even though it taste delicious, that deep fried, cheesy, smothered goodness wasn’t good for me and I began to feel the effects of it. I completely cut out all dairy, poultry and red meats from my diet and let me just say, it was the best decision for me and my body. I feel more energized and I sleep better. I also cut out fast food and try to cook every night (which saves me money). Thankfully, I’ve learned how to make healthy meals that taste bomb, check out my favorite recipe below!

Things you’ll need:

  •  Deveined Shrimp
  • Extra Virgin Olive Oil
  • Cherry Tomatos
  • (1) Cucumber
  • Red Onion
  • (1) Avacado
  • Jalapeños
Going vegan is my ultimate goal, but lets be honest, I can’t go cold turkey. My plan it to build up to it, so right now I only eat seafood (pescatarian). I bought some shrimp (on sale), peeled it and washed them off. Cutting them into smaller pieces is totally up to you, but I like bigger pieces.                                                                                                                                                                                                                                    
Yes, I know, I love seasoning as you can tell! I only use a dash of each.
Shrimp can be very bland,  so this adds some spice. Pictured above it Black Pepper, Lemon Pepper, Onion Powder, Garlic Powder, Paprika, Cayenne Pepper, Tony Chacheres and Seasoning Salt. You don’t have to necessary use all of these seasonings, it’s open to a little remix.
I then coat the bottom of the pan with Extra Virgin Olive Oil and cook the shrimp on low medium heat until they shrivel and turn pink. When they turn a pinkish color, that is when you usually know they are done. Try to avoid overcooking the shrimp because they will be very gummy.
When the shrimp is done cooking, I usually cut up the vegetables salad. I peel and cut up a cucumber, cut up an avocado, dice red onions, cherry tomatoes and jalapeños. I also add sea salt, pepper and olive oil to taste.
This is the finished salad and trust me it’s so good and healthy! I usually will drink a tall glass of ice water with my meal and dinner is served.
